Some days you just want something quick and simple. The side dish, roasted baby potatoes, were left overs from last night supper. I just heated them up in the oven for about 30 minutes at 350. Then 5 minutes before they were ready I sliced a bun in half and put in the oven and cranked up the heat to 450. All of this was happening while I cooked up the sausage dish.
It might not be a fancy dish but darn it was good.
INGREDIENTS
3 Tablespoons of Olive Oil
2 pounds Italian sausage (cut in 1 to 1 ½ inch pieces)
2 peppers (colour of your choice), seeded and cut up in 1 inch pieces
1 large onion, 1/2-inch pieces
½ cup of canned tomatoes
¼ cup of strong Chaga Tea (plain or chai – I used chai)
Black cracked pepper
1/2 cup grated Parmesan Cheese
DIRECTIONS
In a large frying pan at medium high heat add the sausage pieces and cook until slightly browned. Then add the peppers and onion and cook for about 10 to 15 minutes. (I cooked mine for 10 minutes because I like my vegetables to be slightly firm). Then add the canned tomatoes and Chaga tea and stir. Let simmer on low heat for about 10 minutes. Sprinkle with cheese and pepper and serve. I included roasted baby potatoes and a toasted bun to sop up the juices. Oh so good.
